Dune pepper (the alder catkin), also called alder pepper, is a true staple of Nordic cuisine.
Much milder than black pepper, it also differs in another way. It has a sweet note that allows it to express itself equally well in savory dishes and desserts. It also has a resinous, minty, and even fruity flavor, reminiscent of citrus fruits.
Although its shape resembles that of long pepper and its aromas can be reminiscent of black pepper, it is not a pepper in the botanical sense. It is the catkin (the spike-shaped male flower) of a small shrub, which is picked by hand in autumn and winter. It can be eaten fresh or dried (as seen here).
