Apothicari Fire Vinegar is an organic, unpasteurized apple cider vinegar steeped in aromatics such as ginger, turmeric, garlic, onion, horseradish, cayenne pepper, and a blend of garden herbs. It’s an artisanal product, most of whose ingredients are grown on the organic farm, Les Jardins de la Minga, in Baie-St-Paul, Charlevoix. We call it a “Culinary Tonic” because it’s an exquisite and versatile concentrate of flavors that can be added to salad dressings, marinades, sauces, soups, mayonnaise, croutons, Bloody Caesars, and more.
A unique local product
In addition to our fields, our crawler tunnels and two electrically heated greenhouses allow us to grow all the macerated ingredients for Apothicari Fire Vinegar directly on the farm, from the most common, such as garlic and onions, to the most exotic, such as ginger and turmeric. When the season doesn’t allow for a harvest that follows our Fire Vinegar production, organic producers from Quebec are always prioritized, because at Apothicari, like at Jardins de la Minga, concern for the environment and quality are important values to us. That’s why it’s so important to us to offer a product made with organic, local ingredients, the quality of which gives Apothicari Fire Vinegar such a unique taste.
Product History
Apothicari Fire Vinegar is a recipe inspired by fire cider, a remedy created by herbalist Rosemary Gladstar in the late 1970s. Because each ingredient in it is recognized for its health benefits, it was used as an immune tonic for the whole family. I’ve long concocted it for my friends and family, but it wasn’t until 2022 that we decided to refine the recipe to make it a culinary tonic. The same ingredients, with the same benefits, but the unique taste allows for great versatility in cooking.
