There are nearly 40 species of oyster mushrooms most of which are edible, but here we are describing the oyster-shaped oyster mushroom (pleurotus ostreatus). Its hat, 5 to 15 cm in diameter, is in the shape of a long convex spatula which widens to take the form of a shell. The oyster mushroom grows on dead wood or on organic matter such as straw or bark, so it is not always necessary to clean it before preparing it. It is found mainly on beeches, also on other species of dead or living trees (when diseased or damaged)
