Unlike fresh fruit, there is no race against the clock to get to the consumer’s plate. In most cases, fresh fruit will be picked “green”. However, a fruit picked before ripening already has, on average, 70% fewer vitamins than a fruit picked when ripe!
Freeze-drying is a process that, by freezing, removes the water contained in a food or product to make it stable at room temperature and thus facilitate its conservation. The technique uses a very simple physical principle called sublimation. Sublimation is the passage of an element from a solid state to a gaseous state directly without passing through the liquid state.
