CHARACTERISTICS
Spelled is an ancient variety of wheat that is popular for its distinctive taste. It is a nutritious cereal, rich in starch, it is considered the anti-stress food par excellence. It contains more vitamins B1 and B2 than other wheats, protein and fiber in higher proportions and which can almost meet the daily needs in humans. It also contains the 8 essential amino acids in the daily diet of an adult to maintain good health. Its gluten content, similar to the flour of other wheat, however, makes it unsuitable for people with celiac disease or gluten intolerance.
USE
Combined with unbleached white flour, this flour enhances the taste of breads. It can be used in the manufacture of certain bakery products such as muffins and pancakes.
