Here’s what an ounce serving of chia seeds contains: 4.4 grams of protein, 5 grams of Omega-3 fatty acids and 11 grams of fiber. They also contain a considerable amount of manganese, phosphorus and calcium. Chia is currently being investigated whether it might treat type 2 diabetes naturally, thanks to its ability to slow digestion. Its gelatinous texture, when the seeds are added to liquid, can help prevent spikes in blood sugar.

CULINARY TIP: GARNISHED, MIXED, JELLY!
Chia seeds retain their nutritional qualities if eaten whole, unlike flax seeds. Use it in salads, cereals, yogurt, and even pancake or waffle mixes. You can also grind them for use in your smoothies and green juices. One of our favorite ways to use chia is in pudding. When the liquid is absorbed by the seeds, the seeds grow larger (like tapioca pearls) and become gelatinous. For two servings of chia pudding, add a cup of your favorite milk (regular, soy, almond) to a mason jar, add two tablespoons of chia seeds, and honey (or whatever sugar you want) . Cover it, stir it and put it in the fridge overnight. The next day, you’ll wake up to a rich, healthy chia pudding, and add berries, fruit, granola and cinnamon.
